romantic evening for two

as it was our pocket lint anniversary last night - i decided to do what any good, young wife from the 1950s would do - cook a meal. this was despite the big guy's insistence that he would take me out for a fancy meal... you see, we go out for fancy meals on a fairly regular basis as it suits our awkward schedule much better - rarely do i get to cook.

so last night i got home from work, changed into a dress (a dress!), and raided all of the fresh produce that i brought home from the farmer's market. a few weeks ago on martha they made a wild salmon, beet and potato salad that looked to die for... and when i saw the salmon at the market on saturday, i knew what i had to do.

of note: this recipe couldn't be easier - but it would go much faster if you had two ovens to work with - as the salmon, and the potatoes and beets are cooked at very different temperatures. so if you have the time, and are not intimidated by quite the laundry list of ingredients or by making a vinegrette with a raw egg yolk - i highly recommend this recipe. the salmon is baked at a low temp in a steamy oven for the softest meat ever, lemon and dill contrast with the sweetness of the beets. other than the fact that the big guy kept referring to the golden beets as yams, it was really the ideal summer meal.

so as i assembled the meal and laid out the silver (seriously, silver) - i sent the big guy to the store for movies and wine. he came back with ponzi arneis and johnny english. while i do recommend both the wine and the movie, combining the two can result in laughing until wine shoots out your nose. a painful event, to be sure.

it was the perfect evening to wrap up our perfect first year.
